Thai Peanut Pasta

Since we were talking about the Cheesecake Factory earlier this week, I thought I’d share our homemade (and somewhat healthier) version of our favorite dish from there. The Cheesecake Factory makes this with chicken breast, which you can throw in too if you like :)

Ingredients

  • 1 package whole wheat linguine pasta
  • 1 cup julienned carrots
  • 3 scallions, sliced
  • 1 cup bean sprouts
  • 1/2 cup chopped roasted peanuts

Sauce

  • 1 cup peanut butter
  • 4 tablespoons soy sauce
  • 1/2 cup almond milk, or to desired consistency
  • 2 tablespoons olive oil
  • 1 tablespoon ground ginger
  • 1/2 teaspoon cayenne powder
Cook linguine. While cooking, whisk together sauce in saucepan over medium-low heat. Drain pasta, then toss with carrots and scallions. Toss pasta mixture with dressing. Top with bean sprouts & chopped peanuts & serve. Makes 6 generous servings.
